Chateau Saint Pierre has been in the victor family for four generations and today extends over 58 hectares of vines grown in clay-limestone soils. The Domaine is farmed in a sustainale fasion and production is limited in order to focus on cultivating the best quality fruit. A combination of traditional winemaking methods and new technological resources have allowed the family to conserve the unique quality of its wines.
Hand-harvested grapes are macerated in stainless-steel tank for 18 hours under a strictly controlled temperature of 14oC. the grapes are then gently pressed and racked over a period of 24 hours. The wine undergoes both alcoholic and malolactic fermentation, the latter helping to bring out the rose’s earthy tones also developing its fullness and length. The wine is kept in tank until bottling.
Tasting Note and Food Pairing
Elegant and pale in colour with tinges of salmon. Powerful on the nose. Aromas of white peach and spice evolve into apricot jam, guava and exotic fruit. Full in the mouth. A wine rich in character with good persistence of flavours. Pair with fish, shellfish, chicken, Asian cuisine and Mediterranean dishes.
